Description

Tasting Notes

Nose: The nose offers classic Cabernet aromatics of cassis, crushed violets, cedar shavings and tobacco.

Palate: The palate is medium-bodied with notes of blueberries and mocha, followed by ultra-fine, powdery tannins on the impressive and sustained palate.

Food Pairings: Try this wine with venison medallions with a parsnip puree and roasted baby beetroots.

Oak Maturation: 50% new French oak hogsheads for 20 months.

Cellaring: Drink now to 2031

Story: The Tipsy Hill Cabernet Sauvignon is from Bec Hardy’s vineyard in the Blewitt Springs sub-region of McLaren Vale. The ancient soils and elevation of the Tipsy Hill vineyard offer the perfect conditions for growing high quality Cabernet Sauvignon. The property also includes a stunning garden, featuring the rare Tipsy Hill Imperial Concubine rose, from which the name originates.

Vintage: The 2016 vintage was in general very mild with low rainfall. The lack of rain looked like it would result in a quick harvest, but a big downpour in early February made sure the vintage was more evenly spread out. The yields were up on the couple of previous years and the quality looks great.

Alc: 14.5% TA: 7.07g/L
pH: 3.53 RS: 2.4g/L
