TASTING NOTES

COLOUR          Persian ruby red.

NOSE               Fragrant red raspberries and a lick of milk chocolate

PALATE           Vibrancy offered from juicy red fruit notes, leading into a complex of savoury characters. Fine-grained tannins and bright acidity provide an elegant structure.

WINEMAKING NOTE     Totally de-stemmed, whole berry ferments. Hand plunged once a day, increasing to twice daily during peak ferment. Gently pressed with final 50-100L/t separated off to avoid hard tannins.
