VITICULTURE
Cooler conditions and timely rainfall slowed down the ripening process and prolonged harvest. Those favourable conditions, combined with the high diurnal temperature range allowed full flavour development to occur in association with fine acid retention.
WINEMAKING
Both parcels of fruit were kept separate, with the Clare Valley portion going to seasoned French oak hogsheads sur lie for 6 months. This provided a richer, more textural component to blend in with the Adelaide
Hills fruit matured in stainless steel.
