Maturation: 50% matured in large format french oak foudre, 25% in new french oak barrels & remaining 25% in seasoned French oak barrels.
Vintage Comment: “Wet conditions following the end of the 2017 vintage carried on through winter and spring with above average rainfall for the start of the 2018 season. In the Penley Estate vineyards steps were taken to ensure optimum canopies for the conditions. Shoot thinning was employed to improve canopy microclimate where necessary. Existing populations of native grasses and cover crops were left to grow and these competed with vines for moisture, restricting vine growth and keeping shoots from growing beyond ideal length and density.”-Hans Loder.
Tasting Notes: Supple & sexy. A more-ish Cabernet that has intensity and flavour in abundance, in a medium bodied framework. The Steyning Cabernet Sauvignon is as much about the fruit as it is about the structure. Licorice, plum, violet and a hint of bay leaf on the nose. A core of dark fruit, framed by supple velvety tannins and a hint of toasty French oak. Perfect for your traditional lamb & Cabernet pairing, but equally at home with some rich roasted eggplant from your latest Ottolenghi cookbook. Make sure you’ve kept a bottle for the cellar tucked away – this is a style that will be as delicious in ten years time as it is now. Watch the flavours evolve with careful cellaring.
