Vintage
The fruit is sourced throughout Margaret River to truly capture the distinct of the region. Flavour development was closely monitored, with the fruit harvested during the coolest part of the night to capture the freshness of the grapes.
Winemaking
The fruit was softly pressed with only the highest quality juice used to create the final blend. The juice was then settled for a few days at 10⁰C before being racked off, inoculated and fermented at an even rate to maximise fruit expression. When dry, most batches were clarified to remove the yeast lees before being chilled and stabilised. This wine was filtered only once prior to an early bottling.
